Vegetable Stir-Fry Ramen

Ingredients (Serves 2):

  • 2 packets of instant ramen noodles (no seasoning) ($0.50)

  • 1 carrot, julienned ($0.30)

  • 1 bell pepper, sliced ($1.00)

  • 1/2 cup frozen peas or broccoli ($0.50)

  • 2 tbsp soy sauce ($0.20)

  • 1 tsp sesame oil (optional) ($0.20)

  • 1 tbsp olive oil ($0.10)

  • 1 garlic clove, minced ($0.10)

Instructions:

  1. Cook the ramen noodles according to package instructions, discarding the seasoning packets.

  2. Heat olive oil in a pan and sauté garlic for 1 minute.

  3. Add the vegetables and stir-fry for 5-6 minutes until tender.

  4. Add the cooked ramen noodles, soy sauce, and sesame oil (if using). Stir well to combine and cook for another 2 minutes.

  5. Serve hot.
