Pumpkin Spice Protein Pancakes

These protein-packed pumpkin spice pancakes bring all the fall flavors while keeping you full and fueled. Easy to make and perfect for a healthy, seasonal breakfast treat!

Recipe:

Servings: 6 pancakes

Ingredients: 

  • 1 cup Trader Joe’s Buttermilk Protein Pancake Mix  

  • 1 egg  

  • 1 cup milk (water can also be used)  

  • ½ cup 100% pure canned pumpkin  

  • 2 tbsp brown sugar  

  • 2 tsp pumpkin pie spice  

  • 1 tsp cinnamon  

Toppings (optional):

  • Chocolate chips  

  • Maple syrup 

Directions:

  1. In a bowl, combine pancake mix, egg, milk, pumpkin, brown sugar, pumpkin pie spice, and cinnamon. Stir to combine.  

  2. Spray a pan with nonstick cooking spray and heat for two minutes on medium heat.  

  3. Add pancake batter to the pan and cook until the batter begins to bubble and the pancake can be flipped. Repeat until the batter is gone.  

  4. Serve with desired toppings and enjoy!
