Healthy Taco Bowls

These taco bowls offer all the deliciousness of your favorite tacos, but with a nutritious twist. Packed with fresh ingredients and lean protein, they make a perfect quick and healthy dinner option!

Servings: 4

Ingredients: 

  • 1lb ground beef or turkey 

  • 2 cups of basmati rice 

  • Taco seasoning packet 

  • Olive oil 

  • Shredded mexican cheese 

  • Shredded lettuce 

Optional ingredients: 

  • Salsa

  • Sour cream

  • Corn 

  • Black beans 

  • Tomatoes 

Directions: 

  1. In a pan on medium heat, add 2 tbsp of olive oil. After 2 minutes of heating, add ground beef or turkey. Cook until all meat is fully browned and reaches a temperature of 165 degrees. When fully cooked, add a packet of taco seasoning and stir to combine. 

  2. In a pot, cook basmati rice as instructed on the package. 

  3. Begin assembling bowls with rice on the bottom and meat on top. Add desired toppings.

  4. Serve and enjoy!
