Creamy Dijon Chicken
Ingredients
1 tsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt
1/2 tsp freshly cracked black pepper
2 boneless, skinless chicken breasts (about 1.3 lb.)
2 Tbsp olive oil
2 Tbsp butter
2 cloves of garlic, minced
1 cup chicken broth
1 Tbsp Dijon mustard
1 tsp Worcestershire sauce
1/3 cup heavy cream
2 Tbsp grated parmesan cheese
2 cups spinach
Instructions
Season and Cook the Chicken:
Prepare the Seasoning: In a small bowl, mix together the Italian seasoning, garlic powder, onion powder, salt, and freshly cracked black pepper.
Fillet the Chicken: Using a sharp knife, carefully fillet each chicken breast into two thinner cutlets. Season each cutlet with the seasoning mix on both sides.
Cook the Chicken: Heat a large skillet over medium heat and add the olive oil. Once hot, add the chicken and cook for about 4 minutes per side until golden brown and cooked through. Remove the cooked chicken to a clean plate and cover to keep warm.
Make the Sauce:
Sauté the Garlic: In the same skillet, add the butter and minced garlic. Turn the heat down to medium-low and sauté the garlic for one minute until fragrant.
Prepare the Sauce: Pour the chicken broth into the skillet and add the Dijon mustard and Worcestershire sauce. Stir together and scrape up any brown bits from the bottom of the pan.
Add Cream and Cheese: Incorporate the heavy cream and parmesan cheese into the sauce, stirring well. Allow it to simmer in the skillet for 5 minutes. Taste and adjust seasoning with salt and pepper if desired.
Add Spinach: Stir in the fresh spinach and let the heat wilt it.
Combine and Serve:
Return the Chicken: Finally, return the cooked chicken cutlets to the skillet and spoon the Dijon sauce over the top. Allow the chicken to heat through.
