Chicken and Veggie Stir Fry
Ingredients

1 red bell pepper, sliced
1 zucchini, sliced
1 carrot, julienned
1 small onion, chopped
2 cloves garlic, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce (optional)
1 tablespoon olive oil
1 tablespoon cornstarch (optional, for thickening)
1/4 cup chicken broth or water
Salt and pepper to taste
Cooked rice or noodles
Instructions
Cook the chicken: Heat olive oil in a large pan over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook for 5-7 minutes until browned and cooked through. Remove the chicken and set aside.
Sauté the veggies: In the same pan, add the garlic and onions, sautéing for 2-3 minutes. Then, add the bell pepper, zucchini, and carrot. Cook for another 4-5 minutes until the vegetables are tender-crisp.
Add sauces and thicken: Stir in the soy sauce and oyster sauce. If you’d like a thicker sauce, dissolve the cornstarch in chicken broth or water and add to the pan, stirring until the sauce thickens.
Combine: Add the cooked chicken back to the pan and stir everything together. Cook for 2 more minutes to heat through.
Serve: Serve hot over rice or noodles.
