Chicken and Veggie Stir Fry

Ingredients

  • 1 red bell pepper, sliced

  • 1 zucchini, sliced

  • 1 carrot, julienned

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 2 tablespoons soy sauce

  • 1 tablespoon oyster sauce (optional)

  • 1 tablespoon olive oil

  • 1 tablespoon cornstarch (optional, for thickening)

  • 1/4 cup chicken broth or water

  • Salt and pepper to taste

  • Cooked rice or noodles

Instructions

Cook the chicken: Heat olive oil in a large pan over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook for 5-7 minutes until browned and cooked through. Remove the chicken and set aside.

  1. Sauté the veggies: In the same pan, add the garlic and onions, sautéing for 2-3 minutes. Then, add the bell pepper, zucchini, and carrot. Cook for another 4-5 minutes until the vegetables are tender-crisp.

  2. Add sauces and thicken: Stir in the soy sauce and oyster sauce. If you’d like a thicker sauce, dissolve the cornstarch in chicken broth or water and add to the pan, stirring until the sauce thickens.

  3. Combine: Add the cooked chicken back to the pan and stir everything together. Cook for 2 more minutes to heat through.

Serve: Serve hot over rice or noodles.
