Ingredients:
2 chicken breasts
4-5 small/medium russet potatoes
Olive oil + salt, pepper, garlic powder, paprika (for potatoes with no exact measurements)
2 tbsp butter
1 tsp onion powder
1 tsp Italian seasoning
1 tsp paprika
½ tsp salt
½ tsp pepper
1 cup shredded mozzarella cheese
Garlic Parmesan sauce
Directions:
Wash 4-5 potatoes, peel (optional), and cut into small cubes.
Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika (no exact measurements).
Preheat the air fryer to 400°F. Cook potatoes in the air fryer for about 20 minutes, shaking them a few times while they cook.
Once the potatoes are cooking, cut the chicken into cubes.
Cook chicken in a skillet/pan on medium heat with a little butter.
Season chicken with ½ tsp each of salt and pepper. Then season with 1 tsp each of paprika, onion powder, and Italian seasoning.
Once the chicken is finished cooking, add minced garlic and garlic parmesan sauce (enough to coat the chicken).
Add cooked potatoes to the skillet. Top with 1 cup shredded mozzarella cheese. Broil in the oven for a few minutes to melt the cheese OR cover the pan with a lid and let it sit on the stove until the cheese melts.
