Black Bean and Veggie Tacos

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 cup cooked rice (white or brown)

  • 1 bell pepper, sliced

  • 1 zucchini, diced

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 tablespoon olive oil

  • 8 small corn tortillas

Instructions

  1. Cook the rice: Prepare 1 cup of rice according to package instructions (you can use leftover rice too).

  2. Sauté the veggies: Heat olive oil in a pan over medium heat. Add the onion and garlic, and sauté until soft, about 3-4 minutes. Add the bell pepper and zucchini, cooking for another 5-6 minutes until the veggies are tender.

  3. Add spices and black beans: Stir in cumin, paprika, salt, and pepper. Add the drained black beans, stirring to combine, and cook for another 2-3 minutes until everything is heated through.

  4. Warm the tortillas: Heat the tortillas on a dry pan or directly on a gas flame for about 30 seconds per side until warm and slightly charred.

  5. Assemble the tacos: Spoon the black bean and veggie mixture onto each tortilla. Add cooked rice and any optional toppings (like cilantro, salsa, or cheese).
