Vegetable Frittata


Ingredients (Serves 2):

  • 4 eggs ($0.80)

  • 1/2 cup milk ($0.25)

  • 1/2 cup chopped bell peppers ($0.50)

  • 1/4 cup diced onions ($0.15)

  • Salt and pepper to taste

  • 1 tbsp olive oil ($0.10)

Instructions:
Preheat the oven to 350°F (175°C). In an oven-safe skillet, heat olive oil and sauté onions and bell peppers until soft. Whisk together eggs, milk, salt, and pepper. Pour the egg mixture over the veggies and cook for 2-3 minutes until edges start to set. Transfer the skillet to the oven and bake for 15-20 minutes until fully set. Slice and serve.
