Vegetable Fried Rice
Ingredients (Serves 2):
2 cups cooked rice ($0.50)
1 cup mixed frozen vegetables ($0.50)
2 eggs, beaten ($0.40)
2 tbsp soy sauce ($0.20)
1 tbsp olive oil ($0.10)
1 green onion, chopped ($0.30)
Instructions:
In a large pan, heat olive oil and scramble the eggs. Remove eggs and set aside. Add mixed vegetables to the pan and stir-fry until heated. Add cooked rice and soy sauce, mixing well. Stir in scrambled eggs and green onions before serving.
