Vegetable Fried Rice


Ingredients (Serves 2):

  • 2 cups cooked rice ($0.50)

  • 1 cup mixed frozen vegetables ($0.50)

  • 2 eggs, beaten ($0.40)

  • 2 tbsp soy sauce ($0.20)

  • 1 tbsp olive oil ($0.10)

  • 1 green onion, chopped ($0.30)

Instructions:
In a large pan, heat olive oil and scramble the eggs. Remove eggs and set aside. Add mixed vegetables to the pan and stir-fry until heated. Add cooked rice and soy sauce, mixing well. Stir in scrambled eggs and green onions before serving.
