Dinner: Vegetable and Tofu Stir-Fry

  • Ingredients (serves 4):

    • Extra-firm tofu (1 block, cubed) - $1.50

    • Bell pepper (1, sliced) - $0.60

    • Broccoli (1 cup, chopped) - $0.50

    • Carrot (1, sliced) - $0.15

    • Onion (1, sliced) - $0.20

    • Soy sauce (2 tbsp) - $0.10

    • Olive oil (1 tbsp) - $0.10

    • Cooked rice (1 cup uncooked, then cooked) - $0.40

  • Instructions:

    1. Press the tofu to remove excess moisture, then cube it.

    2. Heat olive oil in a skillet or wok over medium heat, add tofu, and cook until golden on all sides. Remove and set aside.

    3. In the same skillet, add onion and sauté until translucent.

    4. Add bell pepper, broccoli, and carrot; stir-fry until vegetables are tender-crisp.

    5. Return tofu to the skillet, add soy sauce, and stir until everything is evenly coated and heated through.

    6. Serve over a bed of cooked rice.
