Rainbow Veggie Sushi Bowls

A deconstructed sushi bowl with sticky rice, colorful vegetables, and a drizzle of soy-ginger dressing.

Steps:

  1. Cook sushi rice and mix with a splash of rice vinegar and sugar.

  2. Slice carrots, cucumbers, avocado, and red cabbage into thin strips.

  3. Arrange rice in a bowl and top with the veggies.

  4. Add a sprinkle of sesame seeds and seaweed strips.
