One-Pan Lemon Garlic Chicken & Veggies


Ingredients (Serves 2):

  • 2 chicken thighs ($1.50)

  • 2 cups mixed vegetables (broccoli, carrots, etc.) ($1.00)

  • 2 tbsp olive oil ($0.20)

  • 2 cloves garlic, minced ($0.10)

  • Juice of 1 lemon ($0.20)

  • Salt and pepper to taste

Instructions:
Preheat the oven to 400°F (200°C). In a bowl, mix olive oil, garlic, lemon juice, salt, and pepper. Toss chicken and veggies in the mixture, then spread on a baking sheet. Bake for 25-30 minutes until chicken is cooked through and veggies are tender.
