Ingredients (serves 2):
Sweet potatoes (2 medium) - $1.00
Black beans (½ can, drained) - $0.40
Corn (½ cup, frozen or canned) - $0.15
Salsa (2 tbsp) - $0.20
Cheese (optional, shredded) - $0.30
Instructions:
Preheat oven to 400°F (200°C).
Pierce sweet potatoes and bake for 45 minutes or until soft.
Slice open sweet potatoes, fluff the insides with a fork, and add black beans, corn, and salsa.
Top with cheese if desired.
