Lentil Soup


Ingredients (Serves 4):

  • 1 cup lentils ($0.50)

  • 1 onion, chopped ($0.50)

  • 2 carrots, diced ($0.30)

  • 2 celery stalks, diced ($0.30)

  • 4 cups vegetable broth ($1.00)

  • Salt, pepper, and herbs to taste ($0.20)

Instructions:
In a pot, sauté onion, carrots, and celery until soft. Add lentils and broth, bring to a boil, then simmer for about 30 minutes until lentils are tender. Season to taste and serve hot.
